Fry Paneer:
Slice the paneer into desired shapes. Heat ghee in a pan, fry paneer slices on medium flame until golden on both sides. Transfer to hot water to retain softness. - 2

In the same pan, add oil, fry onions until slightly golden. Add ginger, garlic, and green chilies, fry until the raw aroma disappears. Cool, blend with mint, coriander leaves, and yogurt into a smooth paste. - 5

Cook the Gravy:
Heat oil in a kadai, add tempering ingredients, and fry briefly. Add blended paste, sauté on low flame for a few minutes, then add 1/2 cup water and cook covered until oil surfaces. - 10

Stir in the spice powders, add another 1/2 cup water, and cook until oil surfaces again. Add cream, stir to remove rawness, then add salt and garam masala. - 12

Combine with Paneer:
Add soaked paneer along with the water for desired consistency. Mix gently, cover, and cook for 3-4 minutes. - 15
Finish:
Garnish with kasuri methi and coriander leaves. For enhanced flavor and color, pour hot ghee mixed with Kashmiri chili powder over the gravy and mix. - 16
