Ingredients

Serves 4 servings
  • 3eggs
  • 2/3 cupunsalted butter (about 150 grams)
  • 2/3 cup unsweetened coffee (about 150 ml, brewed in a moka pot or similar)
  • 3/4 cup sugar (about 180 grams)
  • 2 2/3 cups all-purpose flour (about 320 grams)
  • 1 packet baking powder for cakes (about 2 1/2 teaspoons or 16 grams)
  • 3 tablespoons powdered sugar

    Preheat the oven to 340°F (170°C) and melt the butter, setting a little aside.

  2. 2

    Add the eggs to the melted butter and mix well. Add the sugar and mix until creamy.

  3. 3

    Brew the coffee and let it cool. Add the coffee to the batter.

  4. 4

    Combine the baking powder with the flour, then gradually add the flour mixture to the batter, mixing well to avoid lumps.

  5. 5

    Grease and flour a Bundt cake pan. Pour the batter into the pan and smooth the top.

  6. 6

    Bake in a convection oven at 340°F (170°C) for 45 minutes. Check doneness with a toothpick. Let the cake cool, then remove it from the pan. Dust with powdered sugar before serving. Enjoy your breakfast!
