Swaminarayan kadhi khichdi is a Gujarati dish and it is full of vegetables, which makes it healthy. It is prepared without onion and garlic. It is very tasty and light dish without any strong spices. First of all clean the rice, tuver dal and yellow moong dal separately, mix them in a bowl and wash them with clean water two to three times. Now add another 1 cup of clean water to it, cover it and keep it aside for 30 minutes. If you check after 30 minutes, the rice and lentils have swelled and absorbed the water.

Now heat oil in a pressure cooker and add mustard seeds and cumin seeds to it. When the mustard seeds and cumin seeds crackle, add cloves, star anis, cinnamon stick, bay leaves, dry red chillies, sweet curry leaves and peanuts.

Now add turmeric powder, red chilli powder to this and mix and fry. Then add chopped vegetables - brinjal, potato, carrot, cabbage, green peas and green chilli paste and mix. (You can add any vegetable in this)

Now add dal and rice from the water and add salt and shambhar masala and mix well. Now add a lot of water to this, mix well, cover the pressure cooker lid on medium gas flame, blow 2 whistles and cook 90% of the khichdi.

Now prepare the kadhi batter until the khichdi is cooked on one side. For that add chopped green chillies, sweet curry leaves and ginger to the masher and make a chutney.

After that, add buttermilk to a bowl, add 1 cup of water to it, add chickpea flour and prepared chutney and salt and mix well.

Now open the lid of the khichdi cooker and stir the khichdi. Now add chopped tomato, lemon juice and sugar to this and mix well. After that add 1 cup of water and mix and cook on high gas flame for 1 whistle and let the cooker cool down automatically.

Now we will tempering the kadhi. For this, heat oil or ghee in a pan, add cumin seeds, dry whole red chillies, bay leaves, cloves, sweet curry leaves and saute.

Now add the kadhi batter to this and immediately cover the lid so that the tadka sits in the kadhi. Now add turmeric powder and cinnamon powder to this and mix.

After that, add sugar to it and boil the kadhi while stirring continuously. Now the kadhi is ready, add finely chopped green coriander leaves to it and mix.

Now our khichdi is also cooked. Then add finely chopped green coriander leaves to it and mix well.

Now the satvik kadhi khichdi is available as prasad in our Swaminarayan temple is ready to be served. Garnish this kadhi khichdi and plate it as per your wish.
