Tricolour Rice

This is a naturally coloured recipe. It is a flavourful and colourful rice bowl, loaded with plenty of veggies. Here I haven't used any artificial, harmful colours or flavours. All the three colours are purely natural. This is my small gesture to celebrate our Independence day this year. ♥️

This is a naturally coloured recipe. It is a flavourful and colourful rice bowl, loaded with plenty of veggies. Here I haven't used any artificial, harmful colours or flavours. All the three colours are purely natural. This is my small gesture to celebrate our Independence day this year. ♥️
Steps

Assemble the ingredients. Blanch some tomatoes, carrots and beetroot. In another pot blanch some spinach, coriander and capsicum.

Grind seperately both purees.

For Orange rice, in a pan heat some oil and ghee. Add jeera, cloves, cinnamon and bay leaf. Add carrots, tomatoes and red capsicum. Add chilli ginger garlic paste. Saute for a while. Add orange puree.

Saute for few seconds. Also add some salt and 1/2 tsp biriyani masala. Add 1/3 of cooked rice. Give a good mix. Cook for couple of minutes.

For white rice, heat oil and ghee. Make tadka with all khada masala, 1/2 tsp biriyani masala. Add onions,blanched cauliflower and boiled potato. Add chilli ginger garlic paste. Add salt and 1/3 of cooked rice. Mix it well and cook for 5 mins.

For Green Rice heat oil and ghee, add cloves, cinnamon, curry leaves, chilli ginger garlic paste. Add green capsicum, green peas and coriander. Saute. Add green puree and mix and saute for 2 mins.

Add biriyani masala and remaining cooked rice, give a mix and cook for 5 mins.

To assemble, Grease a mould with some ghee. Make a layer of orange rice in mould. Spread white rice over it and make a white layer.

Spread green rice over white rice. Spread it evenly. Press lightly over the whole green layer to get a perfect unmould.

Unmould in a plate. Garnish with coriander and star anise or as you wish. Serve hot and enjoy naturally tricoloured rice.
