An amazingly delish and a purely delectable side dish in my way with both fresh Spring Onion and Fenugreek Greens. Absolutely a bliss. It goes well with Parathas, Pooris, Pulao and even simple boiled Rice with a dash of pure desi Ghee. Comfort food of all times- this is what I call it, because of it's lip-smacking taste. Try this awesome sabzi for any meal of the day. Protien rich food for your loved ones. You will want more of it.
With both the Greens added, it becomes a way lot healthier and yummier and also flavourful and aromatic too. The best part is that it gets done quickly without much hassles. Since it's a Lamb mince, it gets done very soon. And as the healthy Greens are used in it, it need not be cooked for a long time. The crunch of the leafy Greens should be maintained.

Heat oil in a deep frying pan. Add caraway seeds, ginger garlic paste followed by the onion. Saute them until translucent on a low to medium high heat. Now add rest of the spices and finally the lamb mince. Roast for about 6-7 minutes and then add the chopped tomatoes too. Cook with a lid on a low heat.

After 15-18 minutes, add both chopped fresh fenugreek and spring onion greens. Adjust salt and simmer for 10 more minutes. That's it. Do not cook more.

Do not add water. It gets done in it's own Juices. Garnish with some freshly chopped coriander or parsley. That's all. It's absolutely ready to be dished out. Not only it gets done quickly, it also is deliciously mouthwatering.

Serve it piping hot alongside both rice and rotis. With parathas and pulao, it's a great combo too. Enjoy!
