Basundi is an Indian milk based sweet which is more popular in Gujarat, Maharastra, Andhra Pradesh, Telangana, Tamil Nadu and Karnataka. Basundi is a rich, creamy dessert which is prepared by boiling and reducing milk and flavoured with dryfruits and spices.
Basundi is prepared in Hindu festival and occasions. Sitafal (custard apple)basundi and angoori basundi is popular variation of this blissful dessert.
Traditional Basundi recipe is prepared by simmering whole full cream milk on a low heat till it becomes thick and reduced in quantity. Though in modern recipe we can use condensed milk to reduce time of preparation but rich in taste. Basundi can be served hot, warm or chilled.

Ingredients

40 minutes
2 persons
  • 1 litremilk
  • 1/4 cup or to taste sugar
  • 1 tbspalmond slivers
  • 1 tbsppistachio slivers
  • 1/4 tspcardamom powder
  • 1/4 tspsaffron (soaked in 1 tbsp warm milk)

Steps

40 minutes
  1. 1

    Add milk into a thick bottom pan and turn on the heat. Keep the flame on medium. After one boil, turn the flame to slow and stir well so the layer of cream breaks up and mixes into the milk. Keep stirring occasionally and simmer till it turns thick and reduce the quantity to approximately half.

    Then add the sugar, soaked saffron and cardamom powder. Mix and simmer for five minutes.

    Lastly add almond pistachio slivers and turn off the flame.

    . Serve warm or chilled as per your choice.
    Note:
    1. Can add nutmeg powder and charoli.
