A simple, "humble" version of kagianas with few ingredients, which is transformed just by the way you prepare it.

Cut the tomatoes into small pieces and place them in a skillet. Add a little salt and oregano. Turn the heat to high.

After a few minutes, when the tomatoes start to soften, patiently mash them with a fork until they become a sauce.

Add a little olive oil and crack the 3 eggs over the tomato sauce. Lower the heat.

Carefully stir the eggs with a fork, making sure not to break the yolks.

Remove from the heat, then break the egg yolks, add the feta cheese, and stir. Serve on a plate. Good luck!
