Big Mac Mini Meatloaves
Easy dinner, one of my family’s favorites.
Cooking Instructions
- 1
Add all ingredients to a large mixing bowl and mix well.
Divide meat evenly into a muffin - 2
Bake uncovered at 425 for 25-30 minutes.

When done immediately top each one with a
1/2 slice of cheese. Garnish with a drizzle of
thousand island dressing and dill pickle - 4
Cook sweet potato fries according to
package directions. Serve with side salad

The renovation in my apartment is finally done. It literally took me 4 days to clean up all the mess, dirt and dust. Yesterday was intensive kitchen cleaning day. I do not wanna contaminate my food, so everything has to be cleaned thoroughly and sanitized. I am glad that I am back in my kitchen again, cooking and baking.As I promised, there is a trilogy to the big mac series. Who knows, there might be more than a trilogy, cos you know movies these days have become more of a franchise. To be honest, this idea just popped up in my head during all the chaos and mayhem. This is hands down by far the grandest burger I had ever created; I mean chicken confit with melted gruyere + parmigiano and served with a ladle of white wine sauce in a big mac style burger? We should be eating this with a fork and knife.Anyway, let's forget what I just said. Never trust anyone who eats a burger or a pizza with a fork and knife. My daughters said that the chicken just melts in their mouth. I also made a simple sauce which consist of mayo, ketchup and mustard to cut thru' the richness of the chicken, cheeses and white wine sauce. Enuff said, let's get started with the recipe. Every time me and my kids pass by McDonald's, I will always jokingly told my kids, they should make a McNugget burger with curry sauce. My kids will be fascinated by the idea. They will encourage, "why don't you make one?" So, today, I finally step up for the challenge and make this version of Big Mac. I mean, Singaporeans seem to be obsessed with McNuggets and curry sauce, so why not?I decided to keep this burger simple with just the battered fried chicken and the curry sauce. I didn't include any salad. Because I find that the pairing is already enuff until I realized I need something tangy and fresh to cut thru the richness. That's when the crème fraîche parsley sauce came in. Everything is well balanced without any of the ingredients overpowering one another.The question now is, will a brioche or any of those fancy sourdough burger bun elevate this burger? I don't think so. As I had said before, a burger is just a pizza; you have to get the dough right 1st. If you get a rich and overpowered dough, you will have a difficult time finding what goes in between. My daughters said that this is perhaps the best burger they have ever had.
