Cooking Instructions

Sear frozen steaks on one side only for 2 minutes under broiler at 500F degrees to develop crust. Trim and chop fatcap to make sauce with.

Chop all curry sauce dry and paste ingredients except lemon grass with quartered onions in food processor.

Toast dried coconut flesh in palm sugar and crushed kemiri nuts in dutch oven with trimmed steak pieces till golden, add chopped sauce, warm till fragrant, few minutes. Add coconut milk, add lemon grass stalks, simmer 3 1/2 hours. Do not boil. Add water if sauce evaporates.

Add steaks to sauce, add warm water if needed to immerse steaks in sauce, simmer 20 minutes for medium rare. Remove lemon grass stalks.

Make rotisserie french fries or a bed of egg fried rice. Fry 2 cups of cold boiled basmati rice in peanut oil with onion, ginger, garlic, turmeric. Stir in scrambled egg.

Serve steaks on plate with french fries or a bed of fried rice, and steamed cauliflower, curry sauce on the side. Enjoy. Leftover curry sauce freezes and reheats well.
