I made a traditional and healthy recipe Khichdi but to make more healthy, gluten free and nutritional I swapped rice with sorghum millets and potato with sweet potato. I used more vegetables too. It is healthy as well as tasty and delicious too.

I made a traditional and healthy recipe Khichdi but to make more healthy, gluten free and nutritional I swapped rice with sorghum millets and potato with sweet potato. I used more vegetables too. It is healthy as well as tasty and delicious too.

First, wash the jowar and soak it for six to eight hours or overnight, then drain the water and add jowar, taste to salt and 2 glass water to the cooker and cook for seven to eight whistles.

On the other side put the sweet potato in the steamer and steam it on medium heat for 10 minutes. Once cool, remove the peel.

Now cut the sweet potato and keep all the vegetables ready. Now put oil and ghee in a pan and heat it.

Now when the ghee and oil are hot, add cumin seeds and asafoetida, add curry leaves and green garlic and saute. Then add all the vegetables and cook for one minutes with salt.

Now add tomato and cook again for one minute and then add chilli, turmeric, coriander powder, kitchen king masala mix well and add cut sweet potato and fry for two minutes.

Now add boiled jowar and mix it well. Cook it for 5 minutes. Keep it stirring in between so that the bottom does not stick.Once ready, turn off the flame and sprinkle coriander.

Garnish with pomegranate seeds and serve in a serving plate.

📌Note -
✏️* I have made dry khichdi here, you can add water if you want.
✏️*I have used vegetables here at home. Any vegetables can be used in khichdi and In this way, other millets can also be used to make taste full and healthy khichdi
✏️* Cooking sorghum reduces the quantity from half a bowl to one and a half bowls.
