Melt the butter in a saucepan, then add the flour, mix well. Cook until light brown.

After the roux starts darkening Add the curry powder to the roux, mix well and set aside.

Dice up all the meat and vegetables, put them in the pot as well with all the other ingredients, except the roux.

Bring the curry to a simmer and let it simmer until the carrots, meat and potatoes are done. Around 30 minutes or so.

Add the roux in and mix it well, let it simmer for 10 more minutes and your done.
