' Ma ke haat ka khana '. Who doesn't like to eat meals cooked by their mothers, wives ,sisters or aunts . For centuries , women have ruled the kitchens wholeheartedly . They " cook with love " & " serve with devotion".
Over centuries , cooking has been glorified as a skill of a ' good ' woman . We have been growing up seeing our mothers , sisters , aunts cooking up hearty meals for us & men being the bread winners of the family .
Even with the changing times , we find women do cooking & other jobs with equal zeal .
This is a comfort food where ' ek toap' means one pot & ' dal bhat ' stands for dal & rice . It is a popular Gujarati dish served with a glass of buttermilk . It is easy to make & calls in for ingredients that are easily available in every household.
Ek toap na dal bhat is an easy nutritious dish , where you dump in all the ingredients in your pressure cooker & take just 3 whistles & there you go !!!! It's done .
We honour the woman in our lives be it Mother , Wife , Sister or Aunt with this Wholesome & Balanced Meal .

To make wholesome ek toap na dal bhat, firstly start by making the dry masala mixture.

Take a bowl & add coriander - cumin seeds powder, sugar, red chilli powder, asafoetida & salt.

Add grated fresh coconut,chopped coriander & garlic. Mix. Keep aside. Masala mixture is ready.

For the preparation of the vegetables :
Make criss - cross ❌ cuts on the potatoes. Similarly make criss - cross ❌ cuts on the onions, taking care that the segments are not separated. - 5
Now stuff the potatoes & onions with little of this prepared stuffing mixture. Keep the vegetables aside. There will be a little stuffing mixture remaining, keep that aside.

Ek toap na dal bhat : Wash & soak the rice for 1 hour. Drain & keep aside. Similarly wash & soak toovar (arhar) dal for 1 hour & drain & keep aside.

Take 2 tbsp of ghee in a pressure cooker. Add asafoetida. Add the drained rice & arhar dal.

Add turmeric powder & mix.Saute on a medium flame for 1 minute.

Add the remaining masala. Saute for 1 minute.

Add the stuffed vegetables. Add green peas.

Add salt & mix gently or the vegetables might disintegrate. Add 2 1/2 cups of hot water. Mix.

Pressure cook for 3 whistles. Allow the steam to escape before opening the pressure cooker.

Add the 1 tbsp of remaining ghee, mix ek toap na dal bhat gently & serve immediately with a glass of butter milk & papad churi.
