Aloo matar parcels

For stuffing....Take a wok, add oil, heat it, in goes hing & jeera, let it splutter. Add onion & green chilli, stir fry it until translucent, in goes ginger garlic, saute it until rawness is released. Now add aloo matar, mix it well. Stir fry it for a minute. Add salt, haldi powder, red chilli powder & garam masala powder, mix it well. Stir fry it for 2 minutes. In goes chaat masala, oregano & dhania patta, stir fry it for a minute. Turn off the flame allow it to cool down.keep aside.

For parcels....take a mixing bowl, add maida & ata, salt, ajwain & oil, mix it well.

Add lukewarm water slowly slowly, knead a med soft dough, rest it for 10 minutes. Sprinkle lil oil, knead it again, keep aside.

Take med sized portions of the dough, roll it, make a big roti. Brush some oil, fold it in the shape of parcel, roll it in cylindrical shape, press it.

Flatten it with your hand, fill it with the stuffing in moderation. Seal the edges, make all parcels in the same manner, keep aside.

Take a wok, add good amount of oil, heat it. Lower the flame, deep fry parcels in batches until golden brown. Take out on an absorbent paper.

Plate it, garnish it with a dhania leaf...
