Retro Chicory Pancakes with Snowball Cream

The Ancient Greeks made pancakes called tēganitēs deriving from tagēnon which means ‘frying pan’. Tēganitēs were made with wheat flour, olive oil, curdled milk and honey and served for breakfast.
We, here in the UK, only seem to dig out the pancake pan from the back of the cupboard once a year on Shrove Tuesday. This is the day Christians visit their church to confess their sins and clean their soul, thus being shriven (absolved) before the start of Lent. Any fats are cleared from the household before ritual fasting of the Lenten season. Thin pancakes are made from a batter consisting of flour, egg and milk and served with a squeeze of lemon and sugar.
Just up the road from where I live is the quaint Georgian market town of Olney, famous for the hymn Amazing Grace and the world’s oldest pancake race. The race dates back to 1445 when a harassed housewife rushing to church on Shrove Tuesday ran to the service with a frying pan still in her hand. Since 1950 the race has been transatlantic, held between the women of Olney and Liberal in Kansas, US.
My dear father religiously made pancakes every Shrove Tuesday. I’m using his recipe but giving it an old-school twist flavouring the batter with chicory essence and serving with a snowball-based cream.
Snowball is a cocktail invented in the 1940s and was popular in the 1970s. It is made with the creamy, custard-like, Dutch liqueur, advocaat (made with egg yolks, sugar and brandy), lime juice and lemonade. #pancakeday

Sieve the flour with the salt into a mixing bowl. Add the essence to the milk. Make a well in the centre of the flour and add the eggs. Using a balloon whisk incorporate the eggs into the flour and add the milk slowly. Pour in the melted butter and whisk briefly. If it is overworked the gluten will increase the elasticity in which case one would need to leave it aside to rest for a while.

Brush a pancake pan with a little butter and place over a medium heat. Once a hint of a haze appears, ladle in a measure of batter, swirling the pan to coat the bottom. If pour in too much batter, pour the surplus back into the mixing bowl.

Within a minute or so bubbles will appear, then the surface will look dry and the edges will start to curl. Toss the pancake over and cook on the 2nd side for another couple of minutes until brown. Repeat with the remaining batter. Pile up the pancakes in a stack and keep warm whilst cooking the remaining pancakes. Note: If you prefer not to toss the pancake, pour a little mixture out immediately after pouring the batter in and it will form an edge that can be lifted and flipped (see photo).

Snowball cream: whip the advocaat, lime and lemon juice into the yoghurt.

Place a pancake on the plate, fill one side with a spoon of cream and fold over the pancake. Add some fruit if you wish. Dust with icing sugar.
