Sugar and Cinnamon Pastries, Cheese and Olive Pastries

Sift the flour into a bowl. Add the salt and baking powder, then mix together.

In a separate bowl, combine the warm water (or use milk, or half water and half milk), sugar, and yeast. Stir and let sit for a minute to test the yeast. When bubbles form, gradually pour the mixture into the flour bowl and knead.

Add the oil and knead for at least 10 minutes, until you have a smooth, non-sticky dough. Let it rise for at least 1 hour or until doubled in size.

Divide the dough into balls. Fill each with sugar and cinnamon or any filling you like. Grease a baking pan with oil. (Other filling ideas: cheese and za'atar, cheese and olives, chocolate, jam, fajita-style filling.)

For cheese filling, roll out the dough, add the cheese, and shape into a patty. For sugar and cinnamon, keep the dough as a ball, add the filling, then roll it again and flatten slightly.

Let the filled dough rise again for about 45 minutes. Before baking, brush the tops with milk mixed with a pinch of instant coffee, and sprinkle with black seeds or sesame seeds. As soon as they come out of the oven, brush the tops with water and cover with a towel to keep them soft.

For a shiny finish, just before baking, brush the tops with a mixture of honey and water or with egg yolk mixed with a little milk or water. Bake at 350°F (180°C) until golden on the bottom, then turn on the broiler to brown the tops. Enjoy!
