Pakhala is an Odia cuisine, consisting of cooked rice washed or lightly fermented in water. It is popular in the States of Odisha & North Eastern States & Jharkhand . It has a mouth - watering flavour which makes it a must try .
Pakhala Bhata recently made its debut in Master Chef Australia . Many establishments seized the opportunity to experiment with the dish , with restaurants in Bhubaneswar introducing contemporary twist to Pakhala like Mandarin Pakhala, Pakhala with a Thai twist & South Indian chaska.
Health experts hail the nutritional benefits of Pakhala . Rich in pro - biotics due to its lactic content , Pakhala aids in digestion,boosts immunity & helps maintain electrolyte balance making it an ideal summer meal , also helps control body temperature & regulating blood pressure.
The year 2024 , Pakhala Dibase Celebrations truly succeeded in elevating Odisha 's Iconic Dish to new heights blending tradition with modern flair . Heat water in a pan. Once water starts boiling, add soaked rice. Cook the rice till done.

Strain the rice & keep both fermented rice water (kanji) & strained rice separately.

Just before serving, combine cooked rice, fermented rice water (kanji) & curds.Whisk very well.

Now heat oil in a pan. Add mustard seeds, green chillies & curry leaves. When mustard seeds splutter, add this tempering to the rice mixture.

Cook Pakhala Bhata on the gas. Cook till everything mixes very well. Add salt.Mix. Switch off the flame.

Add lemon juice, grated ginger, roasted cumin seeds powder, chopped coriander & mix very well.

Take out Pakhala Bhata in a serving bowl 🥣. Garnish with chopped coriander, red chilli & sliced onions. Serve immediately & beat the summer heat with this Odia Special One - Pot Meal.

Note : Never use Basmati rice but always use a small grain variety of rice only for this recipe.
