A classic Italian potato dumpling recipe, use this recipe to consistently get fluffy gnocchi for any sauce. Definitely worth the extra bit of effort!

Boil the potatoes in salt water until just shy of cooked, it should still be al dente. If you cook them to doneness now, they will overcook later when you boil the gnocchi.

Mash the potatoes very finely on a floured countertop before adding the flour, egg and salt.

Combine the mixture to form a dough, but be careful not to over knead it - this will result in tough, chewy gnocchi.

Cut the dough into manageable pieces and roll into an even tube/noodle of about 1-1.5cm in diameter (your preference). Next, cut pillows of the same length.

Using a floured fork, roll each pillow over your fork to create the classic gnocchi shape.

Place your gnocchi on a separately floured plate, covered in cling wrap/damp towel to prevent them from drying. These are ready to boil!

To boil gnocchi, gently drop them into boiling salted water and take them out once they begin to float, about 2-3 minutes.

Enjoy with whatever sauce you want!
