Watermelon Rind Ladoos

Tried making WaterMelon Rind Ladoos for the very first time. Wanted to make barfi out of it, but ended up making ladoos.
While making it, i thought to give it a shape of a barfi, but couldn't have much time to refrigrate it and then cut into peices to form barfi, tried too but couldn't worked may be because of the texture and i didnt allow it to rest in refrigerator for much time to cut finely into peices as I just wanted to complete it soon and finished it by making ladoos but that too came out wonderful.
Made it just by adding few ingredients like Gram Flour and Semolina. Added jaggery powder to have healthier version of it. Dessicated Coconut to enhance the flavour but it is optional to add. Added chopped nuts, and toped it with cranberries which just made it YUMMILICIOUS! Must try recipe!

Take all ingredients together to make watermelon rind ladoos. To get watermelon rind, separate the inner white part of the watermelon peels from the outer green layer.

Wash thoroughly with water and cut into peices. Put in a blender jar to form into puree.

Discard big peices if any left from the blended puree OR blend them again seprately. Keep this prepared rind puree aside to use later.

To begin with, In a non sticky kadhai heat ghee on medium flame. When the ghee begins to melt, put gram flour or semolina in it. Mix well and roast for 4 to 5 minutes until it turns aromatic or slightly changes its colour.

Put prepared watermelon rind puree in it. Mix well and roast all together on medium flame.

Roast well until the water contents from the rind completely disappears and the ghee begins to separate. Add jaggery, mix well and roast for few more minutes until the jaggery completely dissolved in it. Tip: Sugar can be added in place of jaggery.

Add cardamom powder and dessicated coconut. Mix well all the ingredients.

Add Chopped nuts, mix well and allow to come at room temperature. Tip: You may add little ghee at this step if required.

Start making ladoos in the required round shape by greasing your hands with little ghee. While serving, garnish with nuts of your choice. I topped it with sliced dry cranberries.
