Salsa Verde (Tomatillo Sauce)

I recently came across tomatillos and I was surprised to find out that although they look just like green tomatoes, they aren't tomatoes at all!
Salsa verde is a popular Mexican original, but adding a few personal touches can transform this popular sauce into a unique creation. Use as a dipping sauce along corn/flour tortilla chips for the ultimate combo.

Assemble all ingredients and preheat oven to 425°F.

Remove husk from tomatillos and de-seed jalapeño pepper. Wash them.

Assemble tomatillos, jalapeño and onion on a baking sheet. Drizzle a generous amount of olive oil and bake for 15-20 minutes, turning half way.

Once tomatillos have darken in color, transasfer to a blender along with cilantro, salt, Italian seasoning, cumin and hing. Blend until smooth.

Transfer to a bowl and enjoy with some homemade crispy tortilla or corn chips. Yum!
