If you have fresh pineapple, why don't you make a Pina colada (non-alcohol) clafoutis! It's an incredibly easy tropical dessert!

Preparations: Cut fresh pineapple into chunks. Grease a 6 inch pie plate with butter. Preheat oven to 180C (360F).

Mix granulated sugar, coconut milk and egg together.

Stir in sifted flour and mix well
- 4
Place the pineapple in the pie plate and pour the mixture over top.

Bake for about 30 minutes.

Dust with confectioner's sugar.

Don't forget the vanilla ice cream!
