During Navratri, most people fast and can get bored eating the same foods every day. So today, I'm sharing my favorite Paneer Thecha recipe. Traditionally, this paneer dish is made with garlic, but I've made it without garlic and onions. It's a spicy, flavorful dish featuring paneer.

During Navratri, most people fast and can get bored eating the same foods every day. So today, I'm sharing my favorite Paneer Thecha recipe. Traditionally, this paneer dish is made with garlic, but I've made it without garlic and onions. It's a spicy, flavorful dish featuring paneer.

Heat a pan and roast the peanuts until fragrant, then remove and set aside. Marinate the paneer with a pinch of black pepper powder, crushed kasuri methi (dried fenugreek leaves), salt, and 2 teaspoons ghee. Set aside.

In the same pan, add a little oil and the whole spice mixture. Let them crackle, then add the green chilies and cilantro leaves. Sauté until they are slightly charred.

Add the cilantro stems, roasted cumin powder, sendha namak to taste, shredded coconut, and a little water. Increase the heat and cook well. Turn off the heat and let the mixture cool, then grind it coarsely.

Heat oil in the pan and, one by one, coat the marinated paneer cubes in the green chili mixture. Fry on low to medium heat until lightly browned. Turn off the heat and cover so the flavors soak in.

Mix everything together, making sure the paneer is well coated with the spicy thecha. Your favorite Navratri Special Paneer Thecha is ready to serve.

If you like, garnish with extra fresh cilantro and a squeeze of lemon. Serve hot with roti, dal and rice, or enjoy on its own!
