Kakra pitha can be made in two ways, one with rice flour and the other using semolina. I made traditional kakra Pitha using semolina. That can be best described as deep-fried semolina balls stuffed with coconut.

Kakara Pitha is a traditional sweet deep fried cake from Odisha. It is offered to God jagannath. It serves hot or cold on many festivals.
Kakra pitha can be made in two ways, one with rice flour and the other using semolina. I made traditional kakra Pitha using semolina. That can be best described as deep-fried semolina balls stuffed with coconut.
Steps

Take a pan and add one cup of water. Now turn on the flame. Add salt, sugar, and fennel seeds.

Now add 1/2 tbsp ghee. When the water starts boiling, add semolina and mix it properly so that there are no lumps. Once it is mixed properly, turn off the gas. Cover it with a lid and keep it aside.

Now heat the pan to make the stuffing. When the pan is hot, add the grated coconut and jaggery and mix well.

Once the jaggery is melted and mixed, add cashew, almond, raisins and roast for one minute. Then add cardamom powder to it.

Now add black pepper powder to it so that the sweetness is balanced. After a minute, turn off the gas. So stuffing is ready.

Now the semolina mixture has cooled down. Now apply some ghee in your hands and knead the mixture well until smooth and make small equal balls.

Now take the ball and give it a bowl-like shape, fill it with stuffing and cover it. Roll it well and press it a little.

Now heat the oil. Keep flame medium to high. When the oil is well heated, add a little of the mixture to it and check. If the mixture rises to the top, then the oil is well heated.

Now add kakara pithas one by one and fry them for 2 min as it is and then turn the pithas upside down. Fry them both side until golden brown. Once fried, remove it with the help of a slotted spoon.

So odisha's famous traditional and delicious 😋 Kakara Pitha is ready.

When they cool down store them in a container and refrigerate it for 7-8 days.
