Harabhara Kebabs

Harabhara Kebab is a very popular veg kebab preparaed with spinach, green peas and potatoes. The word "Harabhara" means full of greens. As this Kebab's key ingredients are Green, the Kebab also has green colour. Apart from spinach and peas other green vegetable like beans, capsicum and paneer(cottage cheese )also can be added.
Basically these kebabs are a popular snack in North Indian cuisine. All North Indian Restaurants have these Kebabs in their starter menu and popularity of these kebabs make tgem favourite starter in many occasions, parties etc.

Steps

Clean spinach leaves by washing in sufficient water and then blanch it.

Heat ghee, add cumin seeds and let them splutter, then add chilli and ginger and sauté for couple of seconds. Then add green peas and cook for 2-4 minutes. Further add blanched spinach (drain and squeezed), mix and cook for 1-2 minutes. Turn off the heat and let it cool.

Once it cools, add into jar, also add coriander and mint leaves. Grind it into paste without adding water.

Transfer this paste into broad vessel. Add paneer, potato, gram flour, bread crumbs, all spices and salt.

Mix well and prepare kebabs.
Add oil in a pan and turn on the heat. Once oil is heated, carefully place kebabs and pan fry from both sides. - 6
Serve hot with green chutney.
