Prepare Fresh Chhena:
• Boil the milk in a pot, stirring occasionally. Once it reaches a boil, turn off the heat and let it cool slightly.
• Gradually add the vinegar-water mixture, one tablespoon at a time, stirring continuously to curdle the milk.
• Strain the curdled milk using a fine strainer or muslin cloth. Reserve the strained whey (chhena water) for later use.
• Rinse the chhena with fresh water to remove any sour taste. - 2

Prepare the Chhena Mixture:
• Transfer the chhena to a mixing bowl. Add semolina and desi khand. Mix well with clean hands until smooth.
• Add 2 tbsp chhena water, mix, cover, and let it rest for 20-25 minutes. - 6

Prepare the Baking Pan & Oven:
• Grease a baking pan with ghee, line it with butter paper, and grease it again.
• Preheat the oven to 180°C for 10 minutes. - 10
Final Mixing & Assembling:
• After resting, add melted ghee and cardamom powder to the chhena mixture. Mix well.
• Add 2 tbsp reserved chhena water and combine until smooth. The mixture should be soft but not too runny. - 11

Bake the Chhena Poda:
• Pour the prepared mixture into the greased baking pan and smooth the top with a spatula.
• Tap the pan twice to remove air bubbles. Garnish with sliced almonds and saffron.
• Bake for 25 minutes or until the edges turn golden and a toothpick inserted comes out clean. - 13

Cool & Serve:
• Allow it to cool completely before demolding. Garnish with silver leaf if using.
