Refreshing Custard Seviyan

Tried this simple easy go recipe of Custard Seviyan. Though I used to make it a lot for my son but this time I tried it new way with Custard powder. There are many variations to make seviyan but I liked this one.
Made it simply by diluting Custard powder and milk and pouring the same in prepared Vermicelli.
Garnished with some rose petals to look more vibrant.
Despite having only watermelon to add in place of fruits, it still came out just Wonderful in taste! Serves best when chilled.

Take all ingredients together to make Custard seviyan. To begin with, in a wok heat ghee and roast Vermicelli on low medium flame until it changes its color to golden brown. Keep aside.

In a saucepan, pour milk and allow it to boil. When the milk begins to boil, add roasted Vermicelli in the milk. Give a good mix. Tip: While boiling milk, add few kesar strands or cardamom powder to make it flavourful.

Also add sugar and mix well. Boil for 6 to 7 minutes on medium flame until the semiya gets cooked completely. Stir in between. In the meantime, take Custard powder and milk. Add milk in Custard powder and make a slurry. Mix well making sure there are no lumps.

Pour in prepared Custard slurry and stir continuously. Cook until the milk thickens and turns creamy. Turn off the flame and transfer it to large bowl. Cool completely and refrigrate for 2 to 3 hours. Note: The Custard Vermicelli will get slightly thicken when cooled or refrigrated. Can be served as it is or you may add a dash of milk.

When chilled, pour in 1/4th Custard seviyan in a nice glass or bowl. Now top it with fruits of your choice. I topped it with chopped watermelon. Further, layer it by pouring 1/4th Vermicelli Custard. Tip : Variety of fruits can be added at this step like pomegranate or grapes that further enhance the flavour as well as it will be more appealing.

Ganish the top layer with chopped nuts and few rose petals. Toped it with pumpkin seeds and sliced cranberries. Serve chilled. Ready to enjoy!
