Ingredients

2.5 hours
  • 2 Tspdry active yeast
  • 1 Tbsphoney
  • 1/2 TspSalt
  • 1 1/4 cupswarm water
  • 350 grbread flour plus 1 tsp for yeast mix
  • 2 tablespoonsolive oil

    Add the yeast to water and mix in the honey and 1 tsp flour. Put aside for 10 - 15 mins.

    In a large bowl add flour and olive oil, water mix and salt and mix with spatula until "shaggy" dough is formed then turn out onto a work surface and Knead together for about 2-3 mins. Do NOT over work this dough its super simple.

    Put into a bowl and cover with tea towel and let rise for about an hour until at least double in size. I put into the oven with a bowl of hot water from kettle.

    Remove from oven and split into 2 equal parts. On a floured surface using your hands and fingers push dough into a rectangle about 25cm wide and 20cm tall. Then fold over the top about a third way down. Then roll towards you. then you can Roll with your hands to the desired lenght - I use a baking sheet so make just little shorter to allow to grow :)

    Repeat with 2nd loaf and then using come sissors cut diagonally into the loaf to make the signature slashes. Then cover with tea towel and let rise for 30 mins while you pre heat oven to 220C.

    Carefully add a new container of how water from kettle into bottom of oven and then Bake for 18 - 20 mins until golden brown - they should sound hollow it tapped. Then remove water and bake for another 3-5 mins. remove and allow to cool before slicing and eating. You can freeze but mine never last that long. ENJOY :)
