I love pita bread, so I attempted to make it at home since it's not easily available.
So simple, since the dough only needs to rise once.

Cooking Instructions

Combine ingredients in a bowl.

When the consistency of the dough becomes even, sprinkle some flour on a clean work surface and knead for about 20 minutes. Place in a warm spot to rise. When the dough doubles in size, return it to the kneading surface, deflate it, and divide it into 6 pieces.

Let it sit for about 15 minutes. Cover with a dry cloth.

Roll into 15 cm width circles.

Bake in oven preheated to 210℃ for 7 to 8 minutes. The dough will puff up as shown in the photo.

Once they cool down, cut them in half. Spread with butter and fill with vegetables, ham, cheese, or any other filling of your choice, and serve.

This is a small batch recipe for 3 medium pita breads. The secret to getting them to puff up into pockets is a super hot oven (at least 260°C/500°F). I recommend sticking to white flour for this because it seems whole wheat flours don't do a good job of rising well (which means no pocket!).Great for falafel, or any kind of sandwich fillings you like.
