Steps

For preparing uttapam we need to soak Ragi, rice and udad dal. For that take Ragi and wash thoroughly and then keep in water for 4 to 6 hours. Same procedure for rice and urad dal. After 4 to 6 hours remove water and grind it finely.

Add methi dana while grinding. When we grind rice, urad dal and Ragi that time soaked poha also grind at last. Keep all paste in one big container for fermenting overnight.

In the morning you get fermenting batter. Mix it well and then you prepare your uttapam and dosa. For uttapam use chopped tomato, onion and coriander. Mix it well in batter. Add salt as per test and mix again keep on medium flame. When Pan heated spread your uttapam.

Due to Ragi uttapam colour is not white.it is little bit brownish. But it is tasty and crispy. Try this uttapam with potato sabji, green chutney and sambar.
