Wash, dry, and cut the agretti into medium pieces. To start the dish, heat the olive oil in a pan, add the rice, then the chopped agretti and a pinch of salt. Sauté briefly, then cover with enough hot water so it just covers the rice by about 1/2 inch (1 cm). Stir and cook according to the time on the rice package, stirring occasionally. While it cooks, dissolve the saffron in 1 tablespoon (15 ml) of warm water for later use.

When the rice is almost done, keep checking it, then pour in the dissolved saffron and stir. Add the nutmeg and the zest of the organic lemon. Instead of the classic butter finish, add the tahini and mix well. Turn off the heat, cover for 5 minutes, then serve and enjoy as you like.
