Ingredients

4 servings
  • 1 bowltoor dal
  • 4 +2 bowls water
  • 1/2 tspturmeric powder
  • 1/2 tspsalt
  • 1/2 tspRed chilli powder
  • 1/2 tspcoriander seeds powder
  • 1/2 tspcumin seeds powder
  • 2 piece or 2 tb spoon jaggery
  • 4dried kokums
  • 1tomato
  • 3dry red chilli
  • 4cloves
  • 1cinnamon stick
  • 1star anise
  • 8curry leaves
  • 1 pinchasafoetida
  • 1/4 tspFenugreek seeds
  • 1/4 tspcumin seeds
  • 2 tbspoonghee
  • 2 tbspoon Chopped coriander leaves

Steps

20 minutes
  1. 1

    Wash toor dal in running water. Transfer it to a pressure cooker. Add water, turmeric powder, salt. Pressure cook for 7 to 8 minutes on a medium to high heat.

    Mash the dal very well with a spoon. Dal should be mashed thoroughly.

    Add green chilli ginger paste, cumin seeds powder, coriander seeds powder, kokum, red chilli powder, jaggery and chopped tomato in cooked dal. Mix thoroughly.

    Add 1.5 to 2 cups water to get a medium consistency.

    Mix again and Bring the lentils to a simmer on a low heat for 7 to 8 minutes.

    For the tempering, heat 2 tablespoons oil (or ghee if you prefer) in a small frying pan or skillet. Lower the heat. Crackle ½ teaspoon mustard seeds first and then add ½ teaspoon cumin seeds. Add all khade masale and curry leaves and saute for 30 seconds. Carefully pour this entire tempering mixture together with the ghee on the simmering dal. Switch off the flame.

    Add 1 to 2 tablespoons of chopped coriander leaves.

  8. 8

    Serve sweet and savoury gujarati dal hot.
