Cook the rice with 1/2 tbsp salt and cool completely. Meanwhile, chop the carrot. Ready all other ingredients. In a kadhaai take 2 tsp ghee. Add mustard and when it splitters add in urad dal. When dal is pink add in jira, ted chilli and hing.

Add in kaju. When pink add in chopped carrots, green chilli and curry leaves. Saute and cook the carrots for 2 minutes.

Add salt and mix. Now add in the cooked and cooled rice. (Cook rice soft for best texture). Mix well. Switch off gas.

Cool the rice again completely. Meanwhile, chop the cucumber and coriander. Add them into the cooled rice.

Lastly mix in the chilled curd. Mix. Taste and adjust for salt to taste. Mix. Garnish and serve. Enjoy probiotic rich healthy summer perfect recipe with family and friends. Happy Cooking😊!!
