“First, wash the brinjals and cut each one into four pieces. Then place them in water to prevent them from turning black.

“Now prepare the stuffing masala by adding chopped onion, garlic, ginger, coconut, tamarind, and a little water to a mixer jar. Blend it coarsely, then transfer it to a small bowl.”

“Add crushed peanuts, red chili powder, turmeric powder, cumin powder, coriander powder, kala masala, jaggery, and salt to the blended mixture. Mix everything well to form the stuffing.

“Take one brinjal and carefully stuff it with the prepared masala mixture. Heat oil in a kadhai, add mustard seeds, and let them crackle. Then add cumin seeds and a pinch of hing (asafoetida). Add the stuffed brinjals and stir gently.”

“Add the leftover masala over the fried brinjals and stir gently. Sauté for a minute, then add 1 cup of hot water. Cover the kadhai and cook for about 5 minutes.”

“Your Bharli Vangi is ready! Garnish with fresh coriander and serve hot with roti or chapati. Enjoy this delicious Maharashtrian speciality.
