Stewed Okra

I craved okra right around the time I needed to submit my contribution to the #CA2025 challenge, perfect timing, really. In Malawi, we usually prepare okra in one of two ways: either as a simple stew or with a touch of bicarbonate soda for a stickier, slimmier experience that many find indulgently nostalgic. I went with the classic stew this time, earthy, comforting, and just the right balance of texture and flavor. It is a dish that speaks to home and heritage with every mouthful.
Stewed Okra

I went with the classic stew this time, earthy, comforting, and just the right balance of texture and flavor. It is a dish that speaks to home and heritage with every mouthful.
Cooking Instructions

Heat the oil in a pot over medium heat and cook the onions until soft and fragrant. Add the chiles and cook another minute

Stir in the pureéd tomatoes and cook stirring often, until most of the tomato liquid evaporates. Stir in the paprika, garlic powder, and salt

Add the okra and some water for a fairly substantial stew. Cook until the okra is tender (about 15minutes). Taste for seasoning and adjust if needed

Serve with nsima or rice and enjoy

A southern U.S. favorite with a few twists: I serve it with lebanse style rice, and the spices have a twist. I added cinnamon and turmeric, which are not commonly used in the US for savory dishes! Also- the okra are kept whole, which keeps them from becoming slimy, and they stay tender. An easy, personal favorite, I hope you enjoy.Tips:-Put your onion in the freezer 15 minutes prior to chopping. Helps with tears :-)-Dont overcook chicken!-There are a lot of ingredients, so rather just imagine it in stages: brown chicken, cook veggies and spices, add liquids and simmer, cook rice, and add okra and chicken. This beef stew turned out so good. Usually I serve it with rice or potatoes but I opted for a low carb choice.... Mashed cauliflower.This was a first for me and it was pretty good. Although I admit potatoes do taste better but I will do this again. It was comforting, flavorful, and very filling.Also instead of thickening the gravy with flour or cornstarch I scooped out some of the broth and veggies and blended them with my immersion blender.
