Ingredients

3-4 servings
  1. 2 lbboneless, skinless chicken thigh
  2. 2garlic cloves, crushed or grated
  3. 1 tbspcoriander powder
  4. 1 tbspcumin
  5. 3 podsgreen cardamom, smashed
  6. 2 tsppaprika
  7. 2 tspsalt
  8. 1/4 tspcayenne pepper (or 1/2 tsp if you like spice)
  9. 1/2 tspblack pepper
  10. 2 tbsplemon juice
  11. 3 tbspolive oil
  12. Yogurt Sauce
  13. 1 cupGreek yogurt
  14. 2-3 clovesgarlic
  15. 1/2 tspcumin
  16. Salt
  17. Pepper

Cooking Instructions

  1. 1

    Mix all the spices together and combine with the lemon juice and olive oil.

  2. 2

    Massage the spices into the chicken and let it marinate in the fridge overnight.

  3. 3

    Preheat oven to 400F.

  4. 4

    Place chicken on an oiled wire rack with a baking sheet underneath. Bake for 25min or until 165F.

    Let chicken rest for a few min then cut and serve on rice with a side of yogurt.
