Miso mushroom oats

A great way to use up any leftover mushrooms! This doesn’t take long to make, but still packs a flavor punch thanks to the umami of the mushrooms and miso. Enjoy! :)

A great way to use up any leftover mushrooms! This doesn’t take long to make, but still packs a flavor punch thanks to the umami of the mushrooms and miso. Enjoy! :)

Melt the butter over low-medium heat. Sauté the shallots and garlic until softened.

Add the mushrooms and sauté until browned.

Add the oats and toast them with the vegetables, stirring frequently to avoid burning.

Pour in the dashi and dissolve in the miso. Cook over medium heat until most of the dashi is absorbed. Add the mirin and let simmer for 2 minutes.

Plate and enjoy :) Add on toppings such as chili oil or grated cheese if you’d like.
