Since I had some phyllo dough in the fridge that was starting to dry out, and there are always leftover shredded cheeses in the fridge, let's make a quick cheese pie!

If the phyllo sheets are a bit dry at the edges, crumble them by hand and cut the rest into small strips with a knife. Prepare all the ingredients on your counter so they're ready to use.

In a large bowl, combine the shredded cheeses and crumbled feta. In another bowl, beat the eggs with a whisk, add salt and pepper, then mix in the remaining liquids: olive oil, milk, and club soda. Stir everything together until combined.

Grease a baking pan and add half of the shredded phyllo. Drizzle with some of the oil mixture.

Add half of the cheese mixture, half of the semolina, and use a ladle to pour half of the liquid mixture over it. Repeat this process one more time. Finish with the remaining phyllo on top, simply brushing it with oil. Bake the pie with the fan on in a preheated oven at 350°F (180°C) for about 40 minutes, until golden and cooked through on top and bottom. The aroma will be amazing.
