These spinach feta savoury pancakes not only make a great low carb nutritious and healthy light lunch, but they are quick and easy to prepare too. #CA2025

Add oil to a medium size pot gently sauté the chopped onion and garlic until soft.

Add the chopped spinach and stir let it cook for a few minutes, sprinkle some salt as well.

Crumble the feta cheese and mix well remove from heat, and prepare the pancakes.

In a bowl mix the flour, eggs, milk and a pinch of salt together. Make sure there aren’t any lumps.

Fill each pancakes with the spinach filling and roll them up. Place them in ovenproof dish.

Make a light bechamel sauce and pour it over the pancakes, sprinkle with parmesan cheese (or cheese of your choice).

Bake in pre heated oven 190c for 20 minutes, and serve.
