I love thai curries and this dumpling soup is up there with one of the best I’ve had - so easy, so warm and so filling. Perfect for the cold here at the moment. Enjoy!
Steps

Sauté curry paste, garlic, and ginger in oil for 1–2 mins until fragrant.

Add chicken broth and coconut milk. Stir and bring to a gentle boil.

Add soy sauce or Maggi seasoning and fish sauce. Simmer dumplings for 10 mins if frozen.

Add pak choy in the last 2 mins of cooking.

Add lime juice. Adjust salt, heat, or lime as needed.

Serve in a bowl. Garnish with herbs, chilli, and spring onion.
Tips
Feel free to adjust the level of spiciness by adding more or less chilli.
