California Farm Artichoke in Lemon Water

Buy tight, fresh green artichokes, with thick fleshy leaves. The fresher, the better. To keep them fresh, do not cut them till ready to steam. Keep them immersed in cold lemon water till ready to steam.
The artichoke heart has fibers, called the “ hay”. Cut 1 inch off the top of the artichoke so you can see this hay, scoop it out with a spoon, soak the artichoke in cold lemon water. Then boil water and steam the artichoke 15 minutes. Then rest in the boiling water 15 minutes. Quarter and serve. Done.

  • 1whole meyer lemon
  • Enough water to immerse the artichokes
  • Enough water to steam the artichokes

Steps

    Remove stem, and cut a cross in the bottom. Cut a full inch off the top, so the Purple Heart of the artichoke heart has been exposed. Underneath is fuzzy “hay”.

    With thongs, Scoop out this fuzzy hay, it is not edible. Immerse artichoke in cold lemon water. It makes the artichoke look and taste better.

    Steam water in pan, lay artichokes bottoms up in pan, steam 15 minutes, turn heat off, bathe artichokes 15 more minutes till you can pull an outside bottom leaf off easily.

    Quarter artichokes, serve warm or cold. Scoop out any leftover “artichoke hay” from the artichoke hearts. Dip hearts in mayo or ranch dressing or oil and vinegar. Enjoy.
