1. *Season the salmon:* Sprinkle both sides of the salmon fillets with salt, pepper, and lemon zest.
2. *Heat the pan:* Heat a large skillet over medium-high heat. Add the olive oil and let it heat up for a minute. - 2
3. *Sear the salmon:* Place the salmon fillets in the pan, skin side up (if they have skin). Cook for 3-4 minutes or until the skin is crispy and golden brown. Flip the salmon over and cook for another 3-4 minutes or until cooked through.
4. *Add butter and garlic:* Reduce the heat to medium and add the butter to the pan. Let it melt and then add the minced garlic. Cook for 1 minute, stirring constantly to prevent burning. - 3
Finish with lemon juice:* Squeeze the fresh lemon juice over the salmon fillets and cook for another minute.
6. *Serve:* Remove the salmon from the-pan and serve hot, garnished with chopped parsley if desired. - 4
Tips:*
- Make sure the salmon is at room temperature before cooking for even cooking.
- Don't overcrowd the pan, cook the salmon in batches if necessary.
- Don't overcook the salmon, it should flake easily with a fork.
