In a large bowl, combine the semolina and salt. Mix, then add the melted clarified butter. Rub the semolina and butter together thoroughly, then let the mixture rest overnight.

Meanwhile, prepare the date filling: Remove any pits from the dates, then add the butter, cinnamon, and toasted sesame seeds. Knead together, adding a little orange blossom water as needed, until you have a soft, pliable date paste. Shape into long ropes.

After the semolina mixture has rested overnight, take a small amount and sprinkle with a mixture of water and orange blossom water. Mix with your fingers, then gather and shape into a rope. Make a lengthwise indentation in the center and place a rope of date filling inside. Seal the dough around the filling, then roll gently to elongate. Press gently to flatten, then cut into diamond shapes.

Fry the pieces in oil until golden brown. Remove from the oil and immediately dip them in honey or simple syrup. Let them soak briefly, then remove and garnish with sesame seeds.
