Well I have no background on this except that I love trying different things and plantains are loaded with great vitamins and minerals. I started eating more as I was iron deficient and plantains helped a lot 😜

Well I have no background on this except that I love trying different things and plantains are loaded with great vitamins and minerals. I started eating more as I was iron deficient and plantains helped a lot 😜

Take 1/2 cup of milk warm and put the yeast in and cover. It will bubble. Put plantains,3/4c milk,egg,sugar,melted butter and pinch of cinnamon in a blender and blend until it’s nice and foamy.

Next put flour and the rest of dry ingredients in a bowl n mix it together. Pour in the mixture from blender and the yeast and milk and stir. It will be thicker than regular pancake mixture just a bit. If too thick add the 1/4c of remaining milk.Let rest for about 3 minutes.

Spray pan with oil and turn heat on about to medium. Pour about 1/2c of batter into the pan and when you start to see bubbles flip. Should be golden brown. If they get too dark too fast turn heat down a little.

These should make about 8 and you will love these. They are so good as they are but if you have a sweet tooth add syrup or jam or berries enjoy 🤩
