Chowmein is a dish of Chinese stir fried noodles with Vegetables and sometimes meat or Tofu. Over the years, many variations of this dish has been developed in different regions of China.
Chowmein aka Hakka noodles is a popular streetfood in Delhi and across India. It's cheap, quick to prepare and easily available both with the street vendors and the restaurants.
This amazing and the most loved dish is absolutely delicious and made with julienned Capsicums, Bell Peppers, Cabbage, Spring Onions and a few simple spices. Chicken, Shrimp, Tofu etc have been used by many in this lovely looking dish.
But it's always this Vegetarian version that hits different. It's a perfect medley of flavours and colours. Soy Sauce renders it a beautiful colour. In a heavy bottomed wok boil water, add noodles, salt and a teaspoon of olive oil. Boil on a medium flame until al-dente. Drain adding cold water. Add a teaspoon of oil and set aside. This way all the noodles will be separate and does not get tangled or mixed.

Julienne, shred, and slice vegetables. In a wok, heat oil and add chopped spring onions and cook on a high flame for 2 minutes. Add all vegetables and cook on a high flame for 2-3 minutes next.

Add soya sauce, ketchup, red chili sauce, vinegar, schezwan sauce, salt and mix well. Add boiled noodles. Set aside.

Garnish with spring onions and that's it. Serve it piping hot right away to your loved ones. Enjoy!
