A simplified, everyday version of my great-aunt’s Ayam Sio. This version uses chicken wings, soy sauce, tamarind, garlic, shallots, and coriander — no fancy herbs, just pantry basics. It’s a light, earthy, slightly sweet-and-sour soy stew. The magic? Marinate for 3 hours, then boil and reduce in one step.

Adjust saltiness and sweetness along the way with kicap manis, and always think ahead: as the sauce reduces, the flavors intensify. It’s lazy to make, rich in flavor, and works beautifully with rice and something green on the side like poached broccoli.

Ingredients

1-3 servings
  • 4chicken wings
  • 2–3 cups water (for marinade & cooking)
  • 1and 1/2 tbsp light soy sauce
  • 2 tspdark soy sauce
  • 1 tbsptamarind pulp (dissolved in warm water and strained)
  • 1 tspcoriander powder — or crush dried coriander seeds into fine flakes
  • 1/2 tspground pepper (white)
  • 2shallots, finely diced
  • 1garlic clove, finely minced
  • Kicap manis (sweet soy sauce), to taste
  • Optional garnish: fresh coriander (as much as you like)
  • Optional Side:1 small head broccoli1/4 chicken stock cube1 garlic clove, minced

    Marinate chicken: In a bowl or pot, mix water, light and dark soy sauces, tamarind pulp, coriander, pepper, shallots, and garlic. Add chicken wings and marinate for 3 hours in the fridge.

    Cook: After marinating, bring everything (chicken and marinade) to a boil, then reduce to medium simmer. Let cook uncovered or loosely covered for 25 minutes.

    Adjust: Add kicap manis to taste as it simmers. Think about how much saltiness or sweetness you'll want in the final reduced sauce. Stir occasionally.

    Finish & serve: Once sauce has thickened and chicken is cooked, serve hot with steamed rice.

    Garnish (optional): Add fresh coriander on top — a lot if you love it.

    Quick broccoli side: Boil broccoli for 4-5 minutes with a bit of water, 1/4 chicken stock cube, and minced garlic. Serve on the side.
