Marinate chicken: In a bowl or pot, mix water, light and dark soy sauces, tamarind pulp, coriander, pepper, shallots, and garlic. Add chicken wings and marinate for 3 hours in the fridge.

Cook: After marinating, bring everything (chicken and marinade) to a boil, then reduce to medium simmer. Let cook uncovered or loosely covered for 25 minutes.

Adjust: Add kicap manis to taste as it simmers. Think about how much saltiness or sweetness you'll want in the final reduced sauce. Stir occasionally.

Finish & serve: Once sauce has thickened and chicken is cooked, serve hot with steamed rice.
Garnish (optional): Add fresh coriander on top — a lot if you love it.
