Soak the chana dal for 3 hours. Heat oil in a pan, add the bay leaf and dried red chili, and let them sizzle for about 3 minutes. Add the drained dal and sauté well.

When all the water has evaporated from the dal, add coriander powder, chili powder, salt, and turmeric powder. Mix well and cook for 5 minutes. Add 1 cup (about 240 ml) water and let it cook for another 5 minutes until the dal becomes very soft.

Let the dal cool, then transfer it to a blender jar and grind it into a paste.

Take the flour in a bowl. Add turmeric and oil, then knead well to make a smooth dough.

Once the dough is ready, make small balls. Flatten each ball, place some dal filling in the center, seal it gently, and roll it out carefully into a flatbread. Make sure the puri does not tear.

When the oil is hot, gently place the puri in the oil. Fry until golden and cooked on both sides. Repeat with the remaining puris.

Serve the stuffed dal puri with any vegetable curry or coconut chutney. It tastes delicious!
