Gobi Masala: For Office Lunch Box

During the summer, meals should be light, simple, and delicious. It's important to use less oil and spices. With this in mind, I made Gobi Masala for my husband's lunch box, along with dal, rice, cucumber, yogurt, and roti. It's tasty and a healthy meal too.

During the summer, meals should be light, simple, and delicious. It's important to use less oil and spices. With this in mind, I made Gobi Masala for my husband's lunch box, along with dal, rice, cucumber, yogurt, and roti. It's tasty and a healthy meal too.

Cut the cauliflower and soak it in water for 10-15 minutes. Rinse well with clean water and drain. Peel and cut the potato, then rinse it as well.

Heat oil in a skillet. Add cumin seeds and asafoetida. Add green chili and ginger, then mix. Add the chopped tomato as well.

Add turmeric powder and red chili powder, then stir. Add the chopped cauliflower and potato, mix well, and add salt. Cover the pan.

After 5-10 minutes, stir and check if the vegetables are cooked. If not, add 1 or 2 tablespoons of water, mix, and cover again.

Once the vegetables are cooked, add coriander powder, dried mango powder, and garam masala. Mix well and sauté for 2-4 minutes. Turn off the heat and transfer to a bowl.

Gobi Masala is ready. Now pack the lunch box. Along with Gobi Masala, I included dal, rice, yogurt, cucumber, and roti.
