Ingredients

15-20 minutes
2-3 servings
  • 1large onion, finely chopped
  • 2 tbspchopped cilantro (dhaniya)
  • 1 tspchopped mint leaves
  • 1 cupbesan (gram flour)
  • 1/4 tspbaking soda
  • 1/2 tsphaldi (turmeric powder)
  • Salt to taste
  • 1/4 tspAjwain (carom seeds)
  • 1/2 tspRed chilli powder
  • 1/4 tspkasuri methi
  • as neededWater
  • 1Hot Oil
  • Oil for frying

Steps

15-20 minutes

    In a bowl, mix chopped onion, cilantro, mint leaves, besan, baking soda, haldi, salt, ajwain, red chili powder, and kasuri methi.

    Add water to form a thick yet pourable batter.Add 1 tablespoon hot oil to the batter and mix well.

    Heat oil in a kadhai (wok) and drop spoonfuls of the batter into the oil and fry until they are half cooked. (Once cooled, cut into small pieces and re-fry until crispy.)

    Fry until golden brown (2-3 minutes) and drain excess oil.

    This double - frying techniques helps to make the bhajiya extra crispy on the outside and fluffy on the inside
