Ingredients

  1. 1 cupsoaked green lentils
  2. 2 tbspsoaked brown lentils
  3. 2 tbspfinely chopped spring onion
  4. 1-2green chilies finely chopped
  5. 1 tspfinely chopped garlic
  6. 2 tbspsunflower oil
  7. 2 tbspgrated/ shredded carrot
  8. 1/2cucumber slices - cut into halves
  9. 1-2small red onion rings
  10. 1 tbspfinely chopped fresh parsley
  11. For dressing:
  12. Juice of 1/2 lemon
  13. Salt to taste
  14. 1/2 tspblack pepper powder
  15. 1 tspolive oil

Cooking Instructions

30-35 mins

    Soak the lentils: Rinse and soak lentils for at least 2 hrs (or overnight for convenience). Saute the lentils: in a pan, heat sunflower oil, drain soaked lentils and saute them on medium heat for 3 mins. Add a splash of water, cover and cook until tender but not mushy (about 10 -15 mins). Let them cool.

    Add finely chopped green chili and spring onion, mix gently. Prepare the base: in a mixing bowl, combine the sauteed lentils with chopped cucumber, grated carrot, onion rings and fresh herbs.

    Season and mix: Add lemon juice, salt and black pepper powder and olive oil. Toss everything gently until mixed. Garnish and serve: Transfer to a serving plate or bowl. Garnish with juicy tomato slices on top and an extra sprinkle of herbs if you like.
