Taking advantage of plum season in my area and the bounty from our gardens, we made this delicious recipe.
Plum Gazpacho
Taking advantage of plum season in my area and the bounty from our gardens, we made this delicious recipe.

Remove the stems from the tomatoes, chop them, add salt and the garlic clove, and blend until smooth.

Add the bell pepper, vinegar, olive oil, onion, and pitted plums. Blend for a couple of minutes, or until the mixture reaches your desired consistency.

Strain through a fine sieve to remove the skins from the plums and tomatoes.

Chill in the refrigerator until very cold. I usually leave it for about three hours. Serve and enjoy.
