Makes 2-5 servings
  1. Pie crust
  2. 1 cupall-purpose flour (about 120 grams)
  3. 4 tablespoonsunsalted butter (about 55 grams)
  4. 1/4 teaspoonsalt
  5. 1/2 teaspoonsugar
  6. 2 tablespoonsGreek yogurt (about 28 grams)
  7. Taro and young coconut filling
  8. 2 cupssteamed taro (about 300 grams)
  9. 1/2 cupyoung coconut meat (about 100 grams)
  10. Coconut water, as needed to loosen the filling
  11. 2 tablespoonsfilling starch (about 15 grams)
  12. 1/4 cupsugar (about 50 grams)
  13. 1/4 cupyogurt (about 70 grams) + 1 tablespoon milk (about 20 grams)
  14. 1/3 cupcoconut milk (about 90 grams)

    Steam the taro until soft, then mash it until smooth. Reserve some diced taro for texture. Combine all filling ingredients in a saucepan over low heat and stir constantly. If the mixture is too thick, add coconut water to loosen.

    For the pie crust, mix the dry ingredients together. Add the butter and knead until combined, then add the yogurt. Shape the dough to fit your desired molds; this recipe makes about 8 mini pies.

    Preheat the oven for 10 minutes. Bake the pie crusts at 400°F (200°C) for 20 minutes, then let them cool. Spoon the taro filling on top and bake for another 15 minutes. Optionally, sprinkle sugar on top and broil to caramelize the sugar.
